Ingredients: Proof: 1 1/2 T dry yeast 2 T honey 1 1/2 C warm water
Dough: 5 C flour (A/P or whole wheat or a mix of both) 4 T olive oil 2 T honey 1 T salt
Optional: 4 T (additional) honey for a sweeter dough 1/2 C chopped fresh herbs (rosemary, thyme, tarragon or oregano)

Directions:Combine first three ingredients and whisk until yeast is mostly dissolved. Let proof for no shorter than 15 minutes. While yeast is proofing, mix remaining ingredients and "mash" together with hands (you will have slight lumps from the oil).
After 15 minutes, add dry ingredients until combined. If using a stand mixer, use dough hook and run for about 5 minutes.
Allow dough to proof for 1 hour.
Preheat oven to 325º.
After an hour, shape dough into a round loaf shape (or use a loaf pan). You could also shape the dough into small balls to make rolls, roughly 2 oz per roll.
Allow dough to proof another 30 minutes or so in it's shape.
Spray top of loaf with pan spray (I use coconut oil spray).
Bake for 30-40 minutes (depends on your oven!). You'll know the bread/rolls are ready when it has a nice golden brown top and you can "knock" on the top and it sounds hollow and firm.

Notes: This is a spinoff of the pita bread recipe I make at work. The dough is pretty forgiving and can be flavored with a variety of options. It makes the house smell divine and there is no bread machine required!
