1 lb. ground chuck
1 lb. ground pork
1 lb. ground veal
2 shallots
4 cloves garlic
2 medium finely shredded carrots
4 T ketchup
1 T Dijon mustard
2 eggs, well beaten
1/4 cup red wine
1 tsp. ground sage
1 tsp. thyme
1 cup plain bread crumbs

Directions:

Briefly mix ground meats. In food processor chop shallots extra fine. Place into a bowl and add shredded carrot, ketchup, mustard, sage, thyme, salt , pepper, eggs, and wine. Mix all ingredients together and shape into a loaf or into two equal size loaves.

Bake at 375º F for 45-60 minutes. Remove from oven and tent with foil. Allow to set about 5-10 minutes before slicing.

Accompany with mashed potatoes, baked beans for kids and escarole and white beans for adults. Or with homemade mac & cheese and broccoli for kids and sautéed spinach and stewed tomatoes for adults.
