Mom's Chili Recipe

3 lb. ground chuck
Onions to taste
Salt, pepper, chili powder, paprika, garlic powder and any other seasonings you like
1 large can crushed tomatoes
1 cup (at least) catsup
1 can red kidney beans ( or any kind of beans you like)
(Red wine may be added as part of the liquid)

Elbow macaroni (any size you like.)
Grated parmesan cheese

Directions:
Directions:
Brown ground chuck and chopped onion until meat is no longer red. Add seasonings, tomatoes, catsup and beans, Simmer and blend. Taste! Add water and/or catsup to get as much liquid content as you want.

Cook pasta about five minutes. Drain and add chili or serve on the side with cheese and any other toppings - sour cream, hot sauce, etc.

Christmas Eve meant candlelight church service, carols around the campfire by the lake, presents under the tree and Mom's chili on the stove. It came to be known as Baby Jesus Chili, a tribute to the reason for Christmas and in memory of our mother.
