Cheesecake filling:

Directions:
Preheat oven to 325F.

For crust:
In a bowl mix graham crack crumbs, sugar, and butter together. Press onto the bottom of a 9-inch springform pan. Bake for 10 minutes.

For cheesecake filling:
Beat cream cheese, sugar, flour, and vanilla at medium speed with electric mixer until well blended. Add eggs 1 at a time, mixing at low speed after each addition. Blend in the sour cream until combined. Add the lemon juice and mix until just combined.

Pour over baked crust.

Bake for 1 hour and 5 minutes to 1 hour and 10 minutes, or until center is almost set. Take out of the oven and run a knife around the edge to loose the cheesecake from the pan. Cool completely. Cover and then refrigerate for at least 4 hours or overnight.

Personal Notes:
You can change out the lemon juice to orange juice, lemon zest, orange zest or whatever you prefer. I just like the added zing of a little bit of citrus in a plain cheesecake.
