1/2 bushel tomatoes
3 onions
4 hot peppers
4-6 cloves of garlic
1/2 cup salt
1 3/4 cup sugar
1 3/4 cup olive oil
4 large cans tomato paste
1-2 T oregano
1-2 T basil

Directions:
1) blend tomatoes (skin on) and other vegetables well in blender
2) cook tomatoes, vegetables, spices, sugar, salt, and oil for about 2 hours
3) add tomato paste and simmer 30 more minutes
4) freeze in batches, or can

I could drink this tomato sauce with a straw. It's sweeter and lighter than most spaghetti sauce, but just tastes very fresh.
