4 cups prepared fruit (1/4 lb. dried apricots and 1 No.2 - 1 lb. 4 oz. can of crushed pineapple - do not drain)
7 cups sugar
1 bottle Certo fruit pectin ( now comes in packets - one packet represents one bottle)

Directions:
First prepare fruit: Add 2 cups water to the dried apricots, cover and let stand 4 hours or overnight, drain, reserve liquid. Grind apricots or chop fine, mix with liquid, add the crushed pineapple, mix fruit.

Measure 4 cups of prepared fruit into a very large saucepan. To the fruit in the saucepan add the exact amount of sugar specified. Mix well. Over high heat bring to rolling boil and boil hard for 1 minute, stirring constantly. Remove from heat. At once stir in Certo. Skim off foam with metal spoon. Then stir and skim for 5 minutes to cool slightly to prevent floating fruit. Ladle into glasses or containers.

This is a recipe from years ago and suggests covering the jam with 1/8 inch hot paraffin. I put my jam in containers and freeze. Also Ball now makes a liquid pectin that I have used when I could not get Certo. I like my jam a little thicker so use 1 1/2 packets Certo when making my jams.
