2 1/2 lbs baby red potatoes, sliced into halves (or quarters if slightly bigger)
3 1/2 Tbsp olive oil, divided
3/4 cup shredded parmesan cheese (2.5 oz)
3 cloves garlic, minced
1/4 cup chopped fresh parsley
2 Tbsp chopped fresh rosemary
3/4 tsp salt, or to taste
1/2 tsp freshly ground black pepper

Directions:
Directions:
Heat oven to 400 F.

In a medium bowl, combine all the ingredients. Toss to coat the potatoes.

Transfer to a roasting pan, baking sheet or 9x13" baking dish.

Roast, stirring once, until golden brown and crisp, about 40 min.
