1/2 cup softened butter
3/4 cup sugar
2 Tbsp packed brown sugar
1 large egg
1 Tbsp lemon extract
2 Tbsp lemon zest
1 Tbsp honey
2 cups flour
2 tsp corn starch
pinch of salt
1 tsp baking soda
2 Tbsp lemon juice
powdered sugar for dusting or lemon glaze for topping

Directions:
Combine butter, sugars, egg and lemon extract. Beat on medium high until light and fluffy. Add lemon zest and honey, beat until combined, scraping sides of bowl with spatula as needed. Add flour, cornstarch, salt and lastly baking soda (keep baking soda in a little mound on top. Add the lemon juice directly on top of baking soda. It will bubble and foam, which means the soda has been activated and this is good. Beat on low until just combined, about 1 minute. Refrigerate batter for 1-2 hours. (do not bake cookies with unchilled batter because it will make thinner cookies). Using cookie scoop make balls of dough and press lightly in center of cookie, place approx. 2 inches apart on cookie sheet.Preheat oven to 350º and bake for approx. 8-10 minutes until edges are set and tops are just set, even if slightly undercooked, pale, and glossy in the center, don't overbake or undersides could become too browned. Cookies will firm up as they cool. Allow to cool on baking sheet for approx. 10 minutes before serving, Dust with either confectioners sugar or apply lemon glaze.
