1 pie crust, baked and cooled

⅔ cups sugar

c. cornstarch

tsp. salt

4 eggs yolk, beaten

3 c. milk

2 tbsp. butter

4 tsp. vanilla

10 oz. Can flaked coconut

cup heavy cream, whipped

Directions:
Directions:
In sauce pan, combine sugar, cornstarch and salt.

Combine milk and egg yolks and gradually stir into sugar mixture. Cook over medium heat, stirring constantly until mixture thickens and comes to a boil. Boil and stir for one minute. Remove from heat and blend in butter and vanilla. Add can Coconut. Pour into pie crust. Refrigerate.


Before serving, top with whipped cream or meringue. (You may sweeten this to taste and sprinkle with remaining coconut.)
