Sweet Rice Pudding/Arroz Doce Recipe

Ingredients: 2 c. water 1c. short grain rice (Italian Arborio or Rive Rice Brand) 1/4 tsp. salt 2 c. milk, scalded Peel of one lemon, without pith, in large pieces 1 c. sugar Ground cinnamon for decorating

Directions:Pour the water into a 2 1/2 qt. saucepan, cover and bring to a boil over medium high heat. Stir in the rice with the salt and redue the heat to medium low. Cover and simmer the rice for 20 to 25 minutes or until the water is nearly evaporated. Rice will be barely tender. Stir in the warm milk and add the pieces of lemon peel. Stirring constantly, continue to simmer until the mixture starts to thicken slightly, about 20 to 25 minutes more. When the rice is well cooked, stir in the sugar and conitue cooking until the sugar is dissolved and the pudding has thickened to the consistency of oatmeal, about 5 to 10 minutes more.The rice should be very tender. Remove from the heat. It will continue to thicken as it cools. Remove the pieces of lemon peel. Pour the pudding into a serving dish or individual serving dishes (4). It should be about 3/4 inch thick. Take the cinnamon and sprinkle it over the top. Covering the pudding with plastic wrap keeps it from drying out. Serve at almost room temperature. |

Notes: My grandmother gave me this recipe in 1985 and I love this rice pudding. In Portugal it is frequently served at Easter and the cinnamon is sprinkled in the pattern of a cross. It is worth effort believe me!
