Cheese Filled Jumbo Shells Recipe

1 box (12 oz) jumbo shells
2 C (2 lb) ricotta cheese
2 C (8 oz) shredded mozzarella cheese
3/4 C grated parmesan cheese
3 eggs
1 Tbsp chopped fresh parsley
3/4 tsp dried oregano leaves
1/2 tsp salt
1/4 tsp ground black pepper
1 (28 oz) jar spaghetti sauce

Preheat oven 350
Spray 13" x 9" x 2" dish with non-stick spray

-Cook jumbo shells according to directions, drain. Cool in single layer on wax paper.
-Combine cheeses, eggs, parsley, oregano, salt and pepper.
-Spread a thin layer of sauce on bottom of dish.
-Fill each shell with cheese mixture and layer in dish.
-Cover with remaining sauce. Sprinkle with additional parmesan cheese.
-Cover with aluminum foil; bake at 350 for 35 minutes. Uncover and bake for 15 minutes more. Should be hot and bubbly when done.
