Casserole:
2 lbs. yellow squash, sliced
2 eggs, slightly beaten
3/4 cup mayonnaise
1 small green onion, chopped fine
1/4 cup green bell pepper, chopped fine
1 cup grated Parmesan cheese

Topping:
1/2 cup Italian bread crumbs
2 tbsp. butter

Directions:
Directions:
Chop and boil squash in lightly salted water for 15 to 20 minutes. Drain and cool. Mix with all other casserole ingredients and place in a greased 9x11-inch casserole pan. Spread Italian bread crumbs over top and dot with 2 tablespoons butter. Bake in preheated 350º oven for 25 to 30 minutes until golden brown.

This casserole is a great side dish for any occasion. It can be made the day ahead, brought to room temperature and baked right before serving!
