6 large eggs
3 tbsp. whole milk
1/4 tsp. salt
1/8 tsp. pepper
1/3 to 1/2 cup grated cheddar cheese

Preheat oven to 350º. Thoroughly spray muffin pan with cooking spray.
In a large measuring cup or bowl, whisk together eggs, milk, salt, and pepper. Pour egg mixture into prepared pan, filling cups about 2/3 full.
Sprinkle cheese evenly among the cups. Bake for approximately 18 to 20 minutes or until eggs set.

A mini muffin pan may be used, decrease cooking time to 8 to 10 minutes. or until eggs set.

Allow to cool in pan for a few minutes before removing to a wire rack.

When cooled, muffins can be wrapped in plastic wrap and frozen.
When ready to eat, simply microwave each muffin for 15 to 30 minutes, or until heated through.
