1 cup yellow cornmeal
1 cup all purpose flour
1 tbsp. baking powder
1/2 cup sugar
1 large egg, beaten
1 cup milk
1/4 cup butter or margarine, melted
2 small tart, red apples, chopped
1/2 cup (2 oz.) shredded sharp cheddar cheese

Directions:
Directions:
Combine first 4 ingredients. Combine egg, milk and butter and add to dry ingredients. Stir until moistened and then stir in apples and cheese.

Place a well greased 9 inch cast-iron skillet or 9 inch square pan in a 425º oven until hot. Remove from oven; pour batter into hot skillet. Bake for 25 minutes until golden brown.
(I reduce sugar to 1/4 cup)
