2 envelopes Knox unflavored gelatin
1 8 oz can crushed pineapple in heavy syrup, drained but reserve syrup
½ cup sugar
2 cups (1 pint) vanilla ice cream, softened
1 cup chopped banana
9” graham cracker crust

Directions:
Directions:
Mix reserved syrup with enough water to equal 1 cup; bring to a boil. In medium bowl, mix gelatin with ¼ cup cold water. Add boiling liquid and stir until gelatin is completely dissolved. Stir in remaining sugar. With wire whip, blend in ice cream; add pineapple and banana. Turn into prepared crust; top with suggested copping and child until firm.
*Suggested Toppings: chopped banana, maraschino cherries, nuts, crushed pineapple, chocolate sprinkles, ice cream toppings.
