1 9” graham cracker crust
1 small can crushed pineapple – drain, but save the juice
1 package (1 Tbsp) unflavored gelatin
½ cup sugar
1/8 tsp salt
1 six oz. can concentrated orange juice
1 cup whipped topping
2-4 Tbsp coconut – for inside and on top

Directions:
Directions:
Drain pineapple, reserving syrup. Add enough water to syrup to make 1 cup. Mix gelatin, sugar and salt thoroughly in small sauce pan. Add syrup and cook over low heat, stirring constantly, until gelatin is dissolved. Remove from heat and stir in undiluted orange juice. Chill, stirring occasionally until mixture mounds when dropped from a spoon. Fold whipped topping into orange mixture – mix thoroughly. Add crushed pineapple and coconut; spread lightly in crumb crust. Garnish with coconut. Can be made a day or two in advance.
