6 Pork Chops
2 tbsp Oil
1/2 c chopped Onion
1/4 c chopped Bell Peppers
16 oz can Tomatoes
1 1/2 c Water
1 c Rice
3/4 tsp Salt
1/8 tsp Pepper
1 1/2 c Monterrey Jack Cheese

Directions:
Directions:
In a large skillet brown pork chops in oil. Remove chops and set aside. Saute onions and green peppers in remaining oil. Stir in tomatoes, water, rice, salt and pepper. Add pork chops on top. Cover and simmer 30 minutes until water is absorbed. Stir occasionally.

Remove chops and stir in 1 cup of cheese into rice mixture. Spoon onto platter arranging chops on top and sprinkle with remaining cheese.
