2 lbs. beef stew meat
1 chopped onion
8 cloves chopped garlic
1 or 2 chopped tomatoes
4 tsp paprika
2 tsp cumin
1 tsp salt
1 tsp coriander
3/4 tsp ginger
1/2 tsp cayenne pepper
1/4 tsp cardamom
1/4 tsp cloves
1/4 tsp pepper
2 bay leaves
2" cinnamon stick or 1/2 tsp cinnamon
6 T plain yogurt

Directions:
Directions:
In dutch oven brown salted stew meat in hot fat in batches so as not to crowd pan. Remove meat from pan and add onion and garlic. When wilted add chopped tomato, then spices. Cook and stir a few minutes. Stir in meat and 1/4 c water. Stir in yogurt, one tablespoon at a time, then stir in a cup of water. Simmer gently until tender, maybe 90 minutes. Serve with yogurt and rice or naan.

This is a convincing copycat of Indian restaurant take-out. I serve it with Patak's mixed pickle, which is a very funky condiment you can get at an Indian store. I'm heavy-handed with the spices.
