1 1/2 lb Brussels sprouts sprouts, ends trimmed and yellow leaves removed
3 tbsp olive oil
1 tsp kosher or sea salt
1/2 tsp black pepper

Optional:
1/2 c toasted almonds
1/4 or more dried cranberries

Directions:
Directions:
Place trimmed Brussels sprouts, olive oil, salt and pepper in a large resealable plastic bag. Seal tightly and shake to coat. Pour onto a baking sheet and place on the centre oven rack.

Roast in a preheated 400 oven for 30 to 45 minutes, shaking pan every 5 to 7 minutes for even browning. Reduce heat when necessary to prevent burning. Brussels sprouts should be dark brown when done. Adjust seasoning with salt if necessary.

Pour into serving dish, toss with almonds. If using dried cranberries, sprinkle on top and serve.
