Pat Kennedy

1 pound ground beef (or less)
2 tablespoons oil
1 large can tomatoes, drained (or part of the water, see below)
cup chopped onion
1 cup uncooked rice
⅓ cup diced green pepper
1 apple, chopped (or grated)
1 tablespoon Chili powder
1 cup water (or mix with tomato juice)
1 teaspoon salt
1 teaspoon paprika
teaspoon pepper
teaspoon celery salt (I leave out)
cup Dry Sherry wine
cup Gallo salami, diced
1 cup zucchini (in the summer, out of the garden)

Brown the ground beef in oil and remove from frying pan. In a casserole dish, oiled, add ground beef, rice, peppers and onion---brown!
Add all remaining ingredients and stir well. Bring to a medium boil. Cover and bake at 350 degrees for 1 hour or more.
Serve with a nice green salad and red wine!!!
