2 Cups Flour
3/4 Cup Sugar
3/4 Tsp. Salt
1 1/2 Tsp. Baking Powder
1/2 Tsp. Baking Soda
1 Cup Chopped Fresh or Frozen Cranberries
1/2 Cup Chopped Walnuts
1 Egg
2 Tbsp. Vegetable Oil
1 Tbsp. Grated Orange Peel
3/4 Cup Orange Juice

Directions:
Preheat oven to 350 - Grease a 9 x 5 inch loaf pan.
Stir together flour, sugar, salt, baking powder and baking soda in a bowl.
Add cranberries and walnuts and stir to coat.
Whisk together egg,oil,zest and juice in another bowl. Add egg mixture to flour mixture and stir until just blended. Pour into prepared pan.
Bake until toothpick inserted in center comes out clean - about 50 minutes. Cool in pan 10 minutes, then remove to wire rack to cool.
