MIX well by hand without using an electric mixer
2 c. sugar
1 1/2 c. oil
2 eggs

Sift
21/2 c. flour
2 tbsp baking powder
1 tsp soda powder
1 tsp salt

Add
1 tsp vanilla
1 c. chopped pecans
3 c. pealed apples (your choice Granny or Macintosh)
Mix this well

Grease and flour a 9x13 pan.
Pour mixture in and smooth
Bake at 350º for 55- 60 minutes.

This is an old recipe that Jannie Barnes wrote on a recipe card and gave to her mom, Dot. Her recipe card forgot to include any mention of apples -- so Dot wrote "where's the apples" -- and Jan wrote back to include 3 cups of apples! This recipe is also good with fresh peaches!
