10 ounces (2 cups) unbleached AP flour
2 tsp Baking Powder
1 tsp salt
1 cup (about 4 oz) shredded sharp cheddar
1 cup sour cream
2 to 4 TBS Whole-milk buttermilk, as needed

Directions:
Directions:
Position rack in upper third of the oven and preheat to 450. Lightly grease a 9x3 inch baking sheet with butter, lard, or shortening and set it aside. Sift the flour, baking powder, and salt into mixing bowl. Add the cheese and toss until it is evenly distributed and lightly coated.
Make a well in the center and add the sour cream and 2 tsp of the buttermilk. Quickly and gently work it into the flour mixture, using as few strokes as possible. The dough will be firm,but not crumbly. Work in a spoonful or so more of the buttermilk as needed until the dough holds together. Drop the dough in heaping 2 TBS mounds onto the prepared baking sheet, spacing them about an inch apart, and bake until the biscuits are risen and golden, about 8 to 10 minutes.
