1 cup pearl barley
3 TBS butter
1 shallot, minced
1/2 # white mushrooms, sliced
2 cups veg or chicken stock

Directions:
Directions:
Heat barley in a dry, medium skillet over medium heat. Cook and stir for 3 to 5 minutes or until barley is lightly toasted. Transfer barley to the slow cooker. Add butter to the pan. When butter is melted, add shallot and mushrooms. Cook and stir for 3 to 5 minutes or until mushrooms begin to soften. Scrape mixture into the slow cooker.
Add stock. Cook on low 4 to 6 hours or high 2-3 until barley is soft. Salt and pepper
