1 stick butter
1 (3-4#) chicken, cut into serving pieces or combo of 6 chicken pieces
3 shallots, peeled, diced
2 garlic cloves, minced
3 TBS AP Flour
1 1/2cup chicken stock
3 TBS chopped fresh parsley
1 TBS fresh thyme or 1 tsp dried
1 TBS fresh rosemary or 1 tsp dried
1/4 # wild mushrooms
1/2 c heavy cream
salt pepper
2 cups cooked rice

Directions:
Directions:
Brown chicken pieces in 3 TBS butter on both sides. Cover pan. Cook 5 minutes then transfer to slow cooker. Add shallots and garlic, cook 3 minutes or until shallots are translucent. Reduce heat to low, stir in flour. Cook 1 minute, stirring constantly. Raise heat to med-high and stir in stock. Bring to a boil, then simmer 2 minutes. Stir in herbs. Pour mixture over chicken.
Cook 6 to 8 hours on low or 3 to 4 hours on high. Heat remaining butter to skillet over med-high heat and add mushrooms. Cook and stir for about 5 minutes.
If cooking on low, raise heat to high. Stir in mushrooms and cream, season with salt and pepper. Cook for an additional 20-30 minutes until the sauce is bubbly. Serve over rice.
