1 1/2 inch ribeye or strip

1 T vegetable oil

Directions:
Season the meat with salt and pepper.
Heat your cast iron skillet over very high heat for about five minutes. Use your infrared thermometer (this is a good excuse to go buy one online) to test the pan's heat -- 700.

Add one tablespoon of vegetable oil and immediately add steaks.
Cook two minutes (that is 120 seconds) per side for rare.
For medium rare cook two minutes, then flip and cook three minutes, or cook it on your BIG GREEN EGG.
