1 pt. crushed pineapple
3 c. water
1 c. sugar
1 tsp. gelatin
Juice of 1 lemon - rind of half
2 egg whites

Directions:
Directions:
Boil sugar and water 5 minutes. Add gelatin which has been softened in a little cold water, cool. Combine with pineapple, lemon juice, rind. Add egg whites beaten. Combine lightly with pineapple mixture. Put in ice cream maker.
Follow directions on ice cream maker or
freeze in 3 parts cracked ice to 1 part rock salt.

Three batches makes 5qt. freezer.

In the old electric ice cream makers it would take about one hour to freeze. So be patient.
The pineapple tends to freeze to the beater bars, so scrape off if you can at least once during the freezing.
You can transfer the sherbet to a plastic tub and place in freezer if your going to eat it the next day.
