1/4 c olive oil
1 T white wine vinegar
1/4 cup basil leaves
1/2 tsp salt
1/4 tsp ground pepper
2 med tomatoes, chopped
1/3 c peeled, seeded, diced cucumber
1 clove garlic minced
lettuce of choice
8 oz fresh mozzarella, sliced

Directions:
Directions:
Puree oil, vinegar, basil, salt and peppe together in blender
Combine tomatoes, cucmber, garlic and 2 Tbs of the dressing in a small bowl
divide lettuce among 4 serving plates, top with mozzarella, then add tomato salsa, drizzle with remaining dressings
