Ingredients:

Beat together:
3 eggs
2 cups sugar
3/4 cup oil (I used 1/4 cup oil and 1/2 cup applesauce)
1 Tbsp vanilla

Add:
2 packed cups coarsely grated zucchini

Sift together:
2 cups flour
2 tsp baking soda
1/4 tsp baking powder
1 tbsp cinnamon
1 tsp salt

Add:
1 cup chopped walnuts (optional)

Directions:
Directions:
Preheat oven to 350
Grease loaf pans with oil or butter and flour on bottom and sides.
Mix ingredients in order above and pour into loaf pans - should make 2 loaves or 24 muffins - depending on size of bread pans.
Bake 45 minutes - 1 hour or until tester comes out clean (I use a butter knife).

Note: if you use applesauce with cinnamon, omit additional cinnamon.
