2/3 c pumpkin purée
1/4 c peanut butter
2 large eggs
3 c brown rice flour

Directions:
Directions:
(1) Preheat oven to 350 degrees. Line baking sheet with parchment paper or use silicone baking mat

(2) Place eggs, peanut butter, and pumpkin purée in a bowl. Beat on medium-high with electric mixer for 1-2 minutes. Gradually add the brown rice flour.

(3) Working on a lightly floured surface, knead the dough 3-4 times until it comes together. Use a rolling pin to roll out dough to 1/4 inch thickness. Use a cookie cutter to create desired shapes and place on a baking sheet.

(4) Place in preheated oven and bake for 20-25 min. until edges are golden brown

(5) Allow biscuits to cool completely.
