Roasted and sliced beets (wrap scrubbed beets, drizzled in olive in foil and bake at 400 until tender—time depends on size)
Goat cheese
Chopped pecans
Salad Greens

Directions:
Directions:
1. While the beets are warm (or use this as an opportunity to reheat it) sprinkle goat cheese on top on an oven proof plate and place in off/cooling down oven for the cheese to warm.
2. Prepare the lettuce, spoon beets and cheese on top and sprinkle pecans.
3. Drizzle with dressing of your choice
