3 eggs
1c oil
2c sugar
2t vanilla
1 8.25oz can crushed pineapple
3/4t nutmeg
1/4t baking powder
3c flour
2t baking soda
1 1/2t cinnamon
1t salt
2c shredded zucchini
Optional 1c date or nuts

Directions:
Directions:
1. Beat eggs. Mix in oil, sugar and vanilla until thick.
2. Add other ingredients, stir well
3. Add zucchini and its juices
4. Poor into greased pans and bake at 350 mini loaf pans 25min 2 regular loaf pans 60min
