6 oz spaghetti, broken in half
3 cups sliced mushrooms (8 oz)
2/3 cup pepperoni (3 oz)
3+ T. margarine
6 cups likely packed torn fresh spinach
1/4 cup grated Parmesan
2 T snipped fresh basil
1 tsp lemon juice

Directions:
Directions:
Prepare pasta according to package directions. Meanwhile, in a 12 inch skillet cook the mushrooms and pepperoni in margarine over medium heat for 5 minutes.Stir in spinach. Cook & stir for 1 minute - till spinach wilts. Remove from heat.

Drain cooked pasta. In large bowl combine pasta, pepperoni mixture, 3T of Parmesan, basil and lemon juice. Toss to combine. Sprinkle with remaining Parmesan.

Serve with breadsticks if desired. Makes 4 main dish servings
