10 large ripe tomatoes
3 large onions chopped
1 c chopped celery
1 sweet red pepper chopped
1 green pepper chopped
1 small hot red pepper chopped (more if very hot sauce desired)
2 tbsp. salt
2 tsp cinnamon
2 tsp ginger
1/2 tsp ground cloves
1 1/2 c Heinz Cider Vinegar
1 c brown sugar

Directions:
Scald and peel tomatoes and cut into large heavy pot or Dutch oven. If very juicy drain off excess juice. Add vegetables, salt, spices and vinegar. Simmer uncovered at low boil until fairly thick (about 1 hour) stirring occasionally as mixture thickens. Add sugar and stir until dissolved and simmer 5 min. Pour into hot sterilized jars and seal.

For lighter color, replace ground spices with 1 tbsp. mixed pickling spice tied in cheesecloth bag. White sugar may replace brown sugar.
