1 Beef Roast
1 Onion, Quartered
Beef Seasoning of you choice
1/2 Cup Salsa
6-8 eggs (depending on how much roast and how large the family)

Directions:
Directions:
Take all ingredients except for eggs and cook all day in the crock pot. When you get home put liquid from the crockpot in frying pan along with the roast. Start shredding the roast (it should just falling apart).

In a small dish, whisk the eggs with a small amount of milk. Pour the eggs over the top of the beef and cook until the eggs are firm.

Serve with tortillas or dinner rolls. If serving on tortilla, add sour cream, salsa, cheese or whatever you prefer on your burrito.

This is a favorite recipe in our family. My ex-mother in law was from Mexico. She was the one who gave me this recipe. Of course it can change as much as you like to suit your tastes.
