1 cup granulated sugar
cup shortening
4-5 mashed fully ripe bananas
1 egg
* cup buttermilk
1 cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
tsp. salt

*I use regular milk and add a teaspoon of lemon juice to it and let it sit for a minute and then add it to the rest of the ingredients.

Preheat oven to 350F.

Combine sugar, shortening, bananas, egg and milk in a large bowl and beat well.

Blend remaining ingredients and add to banana mixture and mix until blended (about a minute).

Pour into greased and floured loaf pan.

Bake at 350F for 45-55 minutes or until done.
