1 lb. ground beef (seasoned with salt, pepper, seasoned salt, garlic powder and onion powder to taste)
2- 10oz cans hot enchilada sauce
1- 10oz can medium enchilada sauce
1- 6oz can of tomato paste
1- 4.5oz can of green chilies
1 package of 8-10 medium tortillas
2 cups sharp cheddar cheese
2 cups Italian blend or monterey jack cheese

Directions:
Directions:
Preheat oven to 350ºF.

In a sauce pan, brown ground beef with seasonings.

Add the enchilada sauce, tomato paste, green chilies to the ground beef and simmer for 20 minutes.

In a 13x9 baking dish layer sauce, tortillas and cheese until sauce is gone. Starting with a layer of sauce with prevent the tortillas from sticking to the bottom of the pan.

Optional:
A layer of re-fried beans
black olives on top
jalapeños on top

Bake at 350ºF for 45-60 minutes
