2 cups cooked and shredded chicken
1 cup grated cheese
1 avocado diced
4 large tortillas
4 Tbsp sour cream
1 Tbsp olive oil

Directions:
Directions:
Mix the chicken, cheese and diced avocados.
Spread 1 Tbsp sour cream on each tortilla; add 1/4 of the chicken mixture and form a burrito roll. Repeat 4 times.
Heat 1 Tbsp olive oil in a frying pan and place all 4 burritos in the pan. Cook for 2 minutes on medium-high heat. Flip to other side and cook for another 2 minutes or until tortillas are golden.

I actually usually use soft taco size tortillas and make 8. These freeze well and are great for quick lunches (just microwave until cooked through, about 1 1/2 minutes).
