3/4 cup all purpose flour
1 1/4 cups Mashed potato flakes
2 tsp baking powder
1 tsp salt
2 Tbsp oil
2 eggs
2 1/2 cups milk
3 Tbsp grated onions

Directions:
Directions:
Heat griddle to 375 F.
Lightly spoon flour into measuring cup; level off. In large bowl, combine flour, potato flakes, baking powder and salt; blend well.
In medium bowl, combine oil, eggs and milk; beat well.
Pour egg mixture into flour mixture; blend well. Stir in onions.
For each pancake, pour 1/3 cup batter onto hot griddle. Turn when edges look cooked and bubbles begin to break on surface.
