1 lb. spinach
3/4 cup finely chopped parsley
cup finely sliced green onions
grated Parmesan cheese
6 eggs
salt & pepper to taste
2 1/2 tbsp. butter
sour cream (optional)

Directions:
Directions:
Wash the spinach and cook it in as little water as possible. Cook until it is just soft. Drain and squeeze out all moisture. Chop spinach fine. Beat eggs until light. Stir in chopped parsley and add the spinach. Season mixture with salt and pepper. In a skillet or omelet pan, saute the sliced green onions in butter. Add egg mixture and cook over low heat until it begins to set. Put the pan under the broiler and cook frittata until it's set. Cut into wedges and serve with Parmesan Cheese or sour cream.
