1 lb. fresh or frozen asparagus
4 green onions, chopped
1 cup half & half
cup grated white cheddar cheese
cup grated parmesan cheese
1 tbsp. butter
3 eggs
tsp. salt
1/8 tsp. white pepper
1- 9" pie shell

Directions:
Cook asparagus. Drain, immerse in cold water, drain again and pat dry. Cut stalks in 4" lengths. Cut remaining ends into 1/2" pieces. Partially bake pie shell at 425 for 8 minutes. In small skillet saute onions in butter for 5 minutes. Place onions and chopped asparagus ends in pie shell. Beat eggs and cream together. Mix in cheeses, salt and pepper. Pour into pie shell. Arrange remaining asparagus in "spoke" pattern in pie shell. Bake at 350 for 45 minutes until set.
