2 lbs. boneless, skinless chicken breasts or tenderloins
1 c. Italian bread crumbs
2 tsp. lemon zest
2-3 cloves freshly pressed garlic
1 c. grated parmesan cheese
1-2 eggs
2-3 Tbsp oil of choice

Directions:
Directions:
In a small, shallow dish, combine bread crumbs, lemon zest, garlic and parmesan cheese. In another small, shallow dish, beat eggs.
Heat oil in fry pan over medium heat.
Dip chicken in egg then roll in bread crumb mixture to cover.
Place chicken in heated oil. Cover for about 3 minutes. Flip sides, DO NOT cover. Flip sides to crisp first side. Use meat thermometer to make sure chicken is cooked through (165 F).
