2 cups all-purpose flour
1 tsp. baking soda
tsp. salt
tsp. cinnamon
⅛ tsp. nutmeg
4 overripe bananas
1 cup brown sugar
cup (1 sticks) unsalted butter, melted and cooled
2 eggs
1 tsp. vanilla extract

Directions:

Preheat oven to 375F. Lightly butter or use baking spray 2 muffin tins.

In a large bowl, combine the flour, baking soda, salt, cinnamon, and nutmeg. Set aside.

Put the bananas and sugar in the stand mixer, and mix with a wire whisk for 3 minutes. Add the melted butter, eggs, and vanilla, and beat well, scraping down the sides of the bowl once or twice.

Mix in the dry ingredients just until incorporated.

Spoon the batter into the muffin tins to fill them about halfway. Tap the tins on the counter to get out air bubbles.

Bake until a toothpick comes out clean when stuck in the middle of a muffin, about 18 to 20 minutes. Let cool for a few minutes before transferring the muffins to a cooling rack.

I like to add chocolate chips to the batter as well sometimes.
Also, I think the batter makes more than 12 muffins.
