Don Doby's Chicken 'n Dumplin's Recipe

1 young hen
2 c. all purpose flour
1/4 tsp. baking powder
Crisco (size of an egg)
1 egg
3/4 c. warm water
2 46 oz. cans chicken broth
1 can cream of chicken soup
1/2 c. water

Directions:
Directions:
Cook hen in a large pot.
Remove hen after cooking - save that broth and add cans of chicken broth to that. Bring to a boil.

Mix Flour, baking powder, Crisco and egg with a fork until crumbly. Gradually add warm water to make a dough. Form dough into a ball. Let sit for 15 minutes.

After 15 minutes, roll out dough thin and cut into strips.

Add strips to boiling broth.
Let dumplings cook for about 10-15 minutes - until they are not "doughy"
While dumplings are cooking, in a separate sauce pan add cream of chicken soup and 1/2 c water. Mix well and heat up.
After dumplings are done, add soup.
Remove the meat from the hen and add to dumplings

This recipe was passed down from Minnie Doby (dad's mom). There's always been a big debate on which to use...a young hen or a whole fryer and it all depends on which Doby you ask!
