Directions:
1. To prepare chicken, place 3½ pounds chicken breast (skin left on for flavor) in heavy Dutch oven.
2. Add 2 cloves chopped garlic, 1 teaspoon salt, 2-3 bay leaves, white pepper to taste.
3. Add 7½ cups water.
4. Bring chicken to boil, then turn down heat and allow to simmer for 1½ hours. Remove chicken and allow to cool. Remove skin and cut in bite size pieces. Strain broth and measure out 7 cups of liquid. Set aside chicken and broth.
5. Melt 3 sticks butter in same heavy Dutch oven (after wiping pan out from any residue.)
6. Add 24 tablespoons flour and whisk until smooth.
7. Remove from heat and slowly add (while whisking) 5 cups whole milk and 7 cups chicken broth (from cooked chicken).
8. Add 2½ tablespoons salt
9. Add 2-3 teaspoons dry mustard
10. Place back on medium heat and cook until right thickness. (After step 10, you are heating and melting cheese. (You don't want to cook chicken any longer.)
11. Add 2 cups grated cheddar cheese (stir until melted)
12. Add 3 pounds cooked chicken.
13. Add 2 small jars button mushrooms, drained.
14. Add two 2 ounce jars sliced or diced pimentos. Stir till well blended and heated through.
