9 boneless chicken fillets
2 ounces butter
2 cloves garlic, peeled and finely chopped
8 ounces mushrooms, sliced
1 level dessertspoon plain flour
½ pint Double cream
1 tablespoon lemon juice
salt and freshly ground black pepper

Cut each chicken fillet in 3 pieces, lengthwise. Melt the butter in a wide frying pan. Warm a shallow ovenproof dish. Put the strips of chicken into the melted butter in the frying pan and cook over a gentle to medium heat, turning them until they are cooked through. If you cook them on too fierce a heat, the chicken gets tough on the outside and the butter burns. Put the strips of chicken in the warm ovenproof dish and keep warm. Put the finely chopped garlic and the sliced mushrooms in the frying pan and cook until the mushrooms are just soft. Sprinkle over the flour and cook for a couple of minutes. Stir in the cream and the lemon juice. Season with salt and pepper, and stir, with the sauce bubbling for 3-4 minutes. Then pour the sauce over the cooked strips of chicken in the dish, and keep warm until you are ready to serve.
