4 chicken breast tenderloins
1 10 ounce bag of fresh spinach
2 cloves garlic,minced
Wild and long grain rice, mixed

Directions:
Directions:
Heat 2-4 tablespoons oil in a skillet. Place chicken breast in slowly and allow to brown. When the chicken is brown, add 4 tablespoons of amaretto per serving and let simmer until amaretto starts to caramelize. Heat another pan (I use a Wok) with about 4 tablespoons olive oil. Add 2 cloves of garlic, minced. When the garlic turns golden brown add spinach and allow it to wilt down turning frequently.
Serve the chicken over the rice with the spinach as a side. For a further taste treat, add 2 ounces of toasted chopped almonds over the chicken and rice.
