3 lbs Small new potatoes, scrubbed. They should either be quite small or cut into 1 1/2" pieces
14 oz Salt
8T Butter
2T Chives - fresh, chopped
1t Pepper - freshly ground

Directions:
Directions:
1. Bring about 8 cups of water to boil in a large pot or dutch oven.
2. Stir in salt, potatoes and cook until potatoes are fork tender - 20 to 30 minutes.
3. Drain potatoes and transfer to a wire rack set over a baking sheet. Let dry until a salty crust forms - about 1 minute.
4. Microwave buttter, chives and pepper in a bowl until melted about 1 minute. Transfer potatoes to a large bowl, mix in melted butter and chives and serve.
