2C Long grain rice
2 Chicken Broth 16oz or two 10 oz tins
1 Small onion, chopped
3T Butter

Directions:

1. Saute onion in butter until translucent
2. Add rice and stir briefly. Make sure all of the rice has been in contact with the butter
3. Add chicken broth and bring to a boil
4. Once mixture is boiling turn off the heat and let sit and continue to cook for 20 min.

This recipe came from the Frog and Peach restaurant 35 years ago when I was gathering restaurant recipes - the restaurant no longer exists - but this has been a family favourite since then.
