3 Beefsteak tomatoes - medium
1T Kosher salt
1/4 C Pancko breadcrumbs
1/4 C Asiago Cheese - finely grated
1T Parsley - Italian chopped
1t Thyme - fresh, chopped
2t Olive Oil - Extra Virgin
2t Pepper - freshly ground

1. Position oven rack 6" from broiler. Turn broiler on high.
2. Slice the tomatoes 1/4" thick in a single slightly overlapping layer, and arrange the slices on a 10" x 12" broiler pan and sprinkle with salt.
3 Mix the breadcrumbs, with the Asiago, thyme, olive oil and a pinch of the salt and 1/2 of the pepper. Sprinkle evenly over the tomatoes.
4. Broil until breadcrumbs are a deep golden brown, 2-3 minutes.
5. Drizzle with olive oil and serve.
